Scallop Season

Fisheries are one of the most important industries on the North Fork. Whether it’s farming oysters, fishing for striped bass, or scalloping, this industry lends itself to the local economy and tourism. The season opened on Monday, November 6, and these tasty bivalves are already popping up on North Fork menus!

Chef Stephan Bogardus of North Fork Table and Inn in Southold is testing out a new recipe he shared on Instagram called Peconic Bay Scallops Shungiku with sweet potato, chanterelle and white soy dashi. Billy’s by the Bay in Greenport began the start of scallop season with a special guest – New York Yankees pitcher Mariano Rivera joined them on the boat and then back at the restaurant for a meal.
