Pizza Rita Opens In Mattituck

Pizza Rita, a 1946 Chevrolet Rack Truck outfitted with a Mugnaini wood-fired oven, opened in 2015 as a mobile pizza truck catering East End events and popups. The company has now added a permanent location with a new home at 55 Middle Road in Mattituck. The menu, which is set to change each week, will include pizza truck favorites like the classic Margherita with tomato sauce, fresh mozzarella, basil, Pecorino Romano, and extra virgin olive oil and calzones filled with ricotta, fresh mozzarella, basil, Genoa salami, tomato sauce, and basil, in addition to Italian-inspired entrées and other creative pies.

The dough is made by hand and allowed to rise naturally, creating a thin crust that is slightly charred but soft and chewy. Imported San Marzano tomatoes are gently crushed by hand to make the sauce, while the mozzarella begins as a cheese curd that is heated and hand stretched prior to events or the restaurant’s opening, resulting in a fresh and creamy mozzarella.
