Boozy Garden Ice Pops

Summer is in full swing and it is one of my favorite times to enjoy with family and friends. We are always looking for fun ways to share treats that are garden to table. These beautiful ice pops are not only refreshing but a festive way to spruce up your dessert spread. We make these for kids and adults alike and incorporate whatever ingredients are most fresh at that point in the season. These pops can be made with or without alcohol. If making them without you just would add more of your lemon simple syrup rather than prosecco. Enjoy our recipe for our festive Red, White and Blue Boozy Garden Pops! Gather your ingredients

  • Ice Pop Molds (Purchased from Amazon)
  • Prosecco of Choice
  • ¼ c Sugar
  • ¼ c Lemon 
  • 5 Strawberries
  • ¼ c Blueberries
  • 1 ½ c Filtered Water
    This recipe makes 6 ice pops

Prepare
Chop your Strawberries. Next make a lemon simple syrup. Combine 1 ½ cups water in a pot with ¼ cup of sugar and ¼ cup of lemon juice. Heat this mixture until the sugar dissolves and put it to the side to cool. 

Make your Boozy Ice Pops
We use a layering method to get the fruit into different levels in the pop. Start by layering your strawberries at the bottom of the mold. Next fill the mold ¼ of the way up with Prosecco. Place in the freezer for 1.5 hours. Remove from the freezer and fill the remainder of the way with your lemon simple syrup mixture. We decided to add some edible Nasturtium Flowers to the center of some of the pops but it’s not required. Top the mixture with blueberries, put the top on and place back in the freezer for 3 more hours. 

Enjoy
Remove the pops from their molds. We enjoy these on their own or if you’re feeling extra fun they can be served in a glass of Prosecco as a topper. Either way your guests will absolutely love this fun treat!
